Food delivery business ideas. A ready-made business plan for a food delivery service from cafes and restaurants. Vulnerabilities of the project

Food delivery is a promising direction for medium and large cities. Despite the presence of competition, the profitability of the business is quite high, as the delivery of dishes to your home or office is in demand.

HOW TO OPEN A FOOD DELIVERY BUSINESS

Home or office food delivery is becoming increasingly popular, especially in cities with a population of 100,000 or more. Their inhabitants suffer from a constant lack of time - it is not enough even to prepare, for example, a delicious dinner. But even those who prefer homemade food do not mind from time to time to please themselves with fragrant pizza or unusual rolls. Office workers order ready-made meals for lunch, as well as to celebrate a birthday, corporate party or the next salary. In general, there are a lot of reasons to order food with delivery. Many cafes and restaurants already offer food delivery around the city, but if not, you may well become an intermediary that performs courier functions. Or, equip your own kitchen, hire staff and open a delivery service with a full production cycle.

IDEAS FOR OPENING A FOOD DELIVERY BUSINESS

You can deliver any kind of food - from groceries from the supermarket to restaurant delights. But nevertheless, there are several options that are known and understandable to the consumer, and therefore are the most popular.

READY LUNCHES

Ready-made and complex meals are mainly in demand among middle-income office workers. At low incomes, managers usually prefer to take food with them in containers and boxes. To cook meals with you, especially for the whole family, you need to spend the whole evening after work. And to dine in a cafe is often not cheap, plus - you have to wait in them, sometimes quite a long time, especially when there is an influx of visitors to lunch time. For those with fixed break hours, this is inconvenient. Therefore, for this category, ready-made meals are an excellent option that saves time and money.

A plus ready meals in that they are usually simple home-cooked meals that do not require rare or expensive ingredients. Borscht is popular different kinds soups, stews with side dishes (porridge, pasta, mashed potatoes, fried potatoes), salads, pastries. You can offer dishes to choose from or make them according to the principle of set meals in public catering: every day there is a new menu.

In order to deliver ready-made meals, you need a minimum investment: you can cook them even at home on own kitchen. And then you can go to the market with ready-made dishes, for example. For sellers, this is convenient, since usually they cannot go anywhere, and for you it will be regular customers. But if you plan to supply ready-made meals to employees of offices and institutions, you will have to invest in professional kitchen equipment.

PIZZA DELIVERY

The popular Italian dish is so loved by our compatriots that pizzerias can be found everywhere - even in small towns and villages. Ease of preparation and a variety of flavors is the key to the popularity of this dish. Pizza is Italian (on a thin dough - 0.5 cm) and American (on a lush dough - 2 cm thick, with the addition of milk, eggs, yeast). For delivery, only American pizza is usually baked, since Italian pizza immediately becomes tasteless when it cools down. And no matter how hard you try, it is almost impossible to deliver hot pizza on a thin crust.

The basis of any pizza is dough, tomato paste and cheese. Additives (toppings) can be anything: various types of meat, sausage, ham, fish, seafood, mushrooms, tomatoes, bell peppers, olives, pineapples - the choice is endless. Ideally, the delivery service should offer 10-12 types of pizza. This is enough to satisfy the demand, and the buyer will not get confused and confused, as if too much large selection. Many deliveries allow the client to independently assemble pizza from ready-made ingredients. Usually they offer pizza in two sizes - 30 cm (weight up to 800 grams) and 40 cm (weight on average 1.5 kg).

To bake pizza quickly, prepare the ingredients ahead of time. For the best taste, keep the ratio 1: 1 - the dough and the filling should be equally divided.

Pizza is often delivered to cardboard boxes which retain heat well. Do not forget to equip the courier with a thermal bag (case) so that the food arrives warm and tasty.

After packing the pizza in a box, cut it into eight pieces (there are special round pizza cutters that allow you to cut it in seconds).

DELIVERY OF SUSHI, ROLLS AND CHINESE Noodles

Sushi and rolls are another popular delivery product. These Japanese dishes are versatile - they are suitable for a regular lunchtime snack, as well as for a birthday, a friendly party or a romantic date. The advantage of sushi and rolls is that they are cold dishes that are tasty even a few hours after cooking, while they do not lose their attractive appearance. Yes, there are baked rolls that should be delivered warm, so use special polyurethane trays, foil and thermal bags.

Japanese cuisine is very diverse: in addition to rolls and sushi, delivery services usually offer first courses (for example, miso soup and tom yum), various salads. For companies, sets are popular - large sets of different types sushi and rolls.

Do not forget that sushi and rolls are served with soy sauce, tinted or white pickled ginger, wasabi spicy seasoning. Usually they are already included in the price of the dish, but sometimes they are sold separately. In addition to simple ones, make training sticks - they are more convenient and suitable for beginners in the world of Japanese cuisine.

Another popular Asian delivery dish is box noodles. Usually it is offered by sushi and roll delivery services, but there are also separate deliveries. The basis is wheat, buckwheat or rice noodles with vegetables, to which meat, seafood, cheese, mushrooms, eggs, etc. are added at the client's choice. Noodles are also eaten with chopsticks.

BURGER DELIVERY

Thanks to the American fast food giants McDonald's and Burger King, various burgers are becoming increasingly popular in our country: hamburgers, cheeseburgers, fishburgers, chickenburgers. The name itself speaks of the filling - usually it is a cutlet of ground beef or chicken, less often - fish or seafood.

From a cheap snack, burgers have moved to a higher segment - now they are served even in restaurants. Of course, the ingredients there are somewhat different: for example, the cutlet is made from marbled beef, complex sauces are used, and not the usual ketchup and mayonnaise. There are even vegetarian recipes - with falafel instead of meat.

The basis of the burger is unchanged - it is a cut and fried bun, cutlet, sauce, lettuce, onion, vegetables (tomato, pickle). It is desirable to deliver burgers warm, but this is not critical.

CATERING

Catering is an offsite service various events- usually receptions, banquets (corporate parties, weddings, anniversaries). In this case, you need to focus on gourmet snacks, as well as hire qualified waiters who are presentable, courteous and correct. Usually catering services are offered by operating restaurants, but there are also stand-alone services.

DELIVERY WITHOUT COOKING

If there is no opportunity or desire to equip your kitchen, hire staff and deliver the food you have prepared, you can organize a delivery service that will cooperate with stationary catering outlets that do not have their own deliveries: cafes, restaurants, canteens, the same pizzerias or sushi bars. Or you can simply create an aggregator site that will offer food delivery from any establishment. For example, there is a large Russian network Delivery Club, which is used by 12 million people. There are also regional services - for example, in St. Petersburg it is Fasteda.

WHICH DIRECTION TO CHOOSE

Each of the above directions has proven its viability. There are other delivery options: barbecue, pies, sandwiches, dishes of a certain national cuisine. First, analyze the market and choose one specialization. In the future, you will be able to expand the range of products offered.

In addition to the dishes that you will prepare, offer your customers bottled drinks: mineral water, juices, coca-cola, beer. They usually make a markup of 30-50%. You can enhance the range and alcoholic beverages. Restaurateurs call alcohol "cash cow", because the labor costs are minimal, and the margin is high. And given that in Russia after 22.00 the sale of alcohol in stores is prohibited, ordering alcohol with delivery is quite in demand. But please note that such trading requires a license.

FOOD DELIVERY BUSINESS PLAN

Before starting a food delivery business, it is worth writing a business plan. It will be needed not only in cases where you want to take a loan from a bank or receive a government subsidy. First of all, you yourself need a business plan: you can use it to estimate expenses and planned income, analyze competitors, highlight potential clients assess possible risks.

PREPARATION OF DOCUMENTS AND OBTAINING PERMITS

Documentation for the delivery service must begin with the registration of the enterprise. You can become individual entrepreneur- this is the easiest and cheapest registration option (the fee is only 800 rubles), which can be done in three days. You should also choose a simplified taxation scheme - USN or UTII.

If you cook in the equipped kitchen, you must obtain permission from the Federal Service for Supervision of Consumer Rights Protection and Human Welfare and the Ministry of Emergencies. All employees who are employed in the kitchen must have medical books.

For example, to register a pizzeria with delivery, you need to issue the following documents:

  • premises lease agreement;
  • a copy of the design conclusion for catering facilities (or the project itself, if the conclusion was not issued);
  • calculation of the amount of food waste depending on the capacity of the enterprise;
  • permission on the possibility of placement;
  • a copy of the BTI floor plan with an explication for the catering enterprise;
  • copy master plan territories;
  • communication schemes (ventilation, water supply, sewerage);
  • layout of technological equipment;
  • copies existing agreements with Vodokanal, passports for existing ventilation units and air conditioning systems;
  • act of revision, cleaning and disinfection of ventilation, sewerage systems, checks of thermal and refrigeration equipment in the catering unit;
  • contract for the maintenance of ventilation and air conditioning systems, including disinfection;
  • measurements of radioactivity on the soil and in the building (if the pizzeria is located in a new building);
  • certificates for finishing and building materials;
  • copies of bacteriological and chemical analysis drinking water;
  • a copy of the certificate of state registration of a public catering enterprise;
  • a copy of the charter of the enterprise;
  • a copy of the tax registration certificate;
  • bank details (in full), certified by the signature of the director and a wet seal;
  • copies of orders on the appointment of responsible persons for production control;
  • certificate or certificate of completion of the training of the responsible person to conduct production control at the facility;
  • assortment list of products;
  • copies of contracts for the disposal of waste: solid waste, food, mercury-containing and fluorescent lamps;
  • copies of contracts for the supply of food and food raw materials;
  • a copy of the contract for deratization, disinfestation and disinfection works (and license);
  • a copy of the contract for washing overalls (with a copy of the sanitary and epidemiological conclusion of the laundry);
  • a copy of the contract for periodic medical examinations (and license);
  • program of laboratory and production control over compliance with sanitary legislation;
  • contract for production control with an accredited laboratory (license, accreditation, sanitary and epidemiological conclusion for a laboratory center);

  • laboratory research on the microclimate, noise and illumination of workplaces at a catering enterprise;
  • sanitary passport for the facility (issued at the disinfection service);
  • sanitary passport for a grocery car with a monthly mark on the disinfection of vehicles;
  • decorated corner of the consumer (registered book of complaints and suggestions, Federal Law 52 of 30.03.1999 "On the sanitary and epidemiological welfare of the population", " Sanitary regulations organization Catering and additions thereto”, “Sanitary rules for the implementation of the production control plan”, “ Hygiene requirements to the expiration dates of food products”, “Consumer Protection Law”);
  • marriage journal (it contains marks about all checked dishes);
  • a journal for accounting and spending disinfectants with an approved calculation, as well as a journal for examining employees.

If you plan to sell alcohol as well, you need to obtain the appropriate licenses.

ROOM SELECTION

The easiest option is to rent a room that is already prepared for cooking. For example, this is a former canteen of an enterprise. Its area may be small - 35 square meters is enough if you have just started a business.

The location of the premises for cooking should be such that delivery around the city does not take too much time, because it is desirable to bring the dishes warm. It is not necessary to be located in the center, but good transport accessibility will be a big plus. If you open delivery in a metropolis, then you can focus only on a certain area, and with successful business development, open new points in other areas. If you work in a small town, you can also deliver meals to nearby settlements. It is profitable to deliver food around the clock, making an extra charge for delivery at night.

PURCHASE OF EQUIPMENT

You will need standard kitchen equipment: refrigerator and freezer, gas or electric stove, oven, work surfaces, sink, extractor hood. Of course, the specifics depend on what kind of food you will be preparing. For example, a pizzeria will need special ovens that allow you to bake several pizzas at once. Now for deliveries, few people cook pizza as in the original - in a wood-fired oven. Usually electric ovens are used.

Choose equipment based on your budget: you can buy expensive professional equipment, or you can get by with used equipment, because you will not flaunt the kitchen. Take care of the little household appliances: food processor, microwave, mixer, blender.

A variety of kitchen utensils is also necessary: pots, pans, knives, cutting boards, containers for storing ingredients, saucepans, baking dishes, spatulas, spoons, graters. If you are cooking Chinese noodles, you will need wok pans.

For a pizzeria, you need a dough sheeter, for delivering sushi, a rice cooker.

Another big investment in food delivery is a car. It is good if you have a personal car in which you will deliver food. If not, you can hire a courier with your own car. He will have to compensate for gasoline and depreciation vehicle. You can buy an inexpensive used car. For pizza delivery, it is convenient to use a moped or even a bicycle with a trunk. However, the car still looks more solid.

When it comes to food delivery, packaging is important. Liquid dishes and sauces should not spill, hot should remain hot, cold - cold. It is better not to add sauces directly to the salad - let the client do it. Cutlery, napkins, toothpicks, mints or chewing gum must be included with each order free of charge. You can add a flyer with promotional offers.

RECRUITMENT

To organize food delivery to you in without fail you will need a chef (pizza maker, sushi chef), a courier and an operator who will take orders.

Additionally, auxiliary kitchen workers, a dishwasher, a cleaner, a food warehouse employee, a marketer (especially at the first stage), and a promoter may be required.

The number of workers in the kitchen depends on what you will cook and in what quantities. For example, one person can handle the production of burgers, and for a varied menu, of course, several employees of different specializations are needed.

The key figure in any establishment is the chef. After all, if the food is not tasty, it will kill the delivery. It is desirable that there is a cook-technologist who can draw up technical and technological maps necessary for the sale of dishes.

As for the courier, he must be neat and polite. To avoid fraud on the part of employees, check your registration and passport details.

You can entrust the purchase of products to the chef or you can do it yourself. Of course, the products must be fresh, because poor-quality food will not only ruin the reputation of the delivery service, but can also lead to serious problems with regulatory authorities and even lawsuits.

CUSTOMER ATTRACTION

On the initial stage you have to invest in marketing, because no matter how great your delivery is, if no one knows about it, the business will not be successful. To do this, you should use all available promotion platforms both online (through your own website, social networks, banners on city forums and portals) and offline (distributing leaflets in high traffic areas, city lights, billboards, radio advertising).

The delivery service needs its own website. Place colorful photos of your dishes on it (it is advisable to order professional photography of dishes from your menu, and not just take pictures from the Internet), their composition, current prices, grams. Make a "basket" and the possibility of ordering directly through the site. It is convenient to use website builders – this way you can create an attractive website even on your own. In pizzerias, usually a quarter of orders are made through the website, the rest - by phone.

Start a few hashtags for your delivery and monitor the Internet for reviews - you can post positive ones on your pages to stimulate demand, because customer reviews are an important social signal. If you come across negative reviews and criticism, try to take into account your mistakes and smooth out the conflict, for example, by offering an extra discount or tasty compensation. Encourage clients to give feedback- leave feedback and write comments. So you show your loyalty and can quickly make adjustments.

For delivery, it is desirable to purchase a memorable mobile number, especially if you plan to advertise on the radio.

Food delivery vehicles can also be used as advertising surfaces.

To establish a sales channel, you can go through potential customers (for example, if you offer ready meals) and treat them to free meals. Provide your menu so that it is at hand in the office.

DEVELOPING THE MENU

When launching your own delivery, think over the menu in advance. Explore what other deliveries in your city, deliveries in Moscow and St. Petersburg offer. It’s worth starting with popular positions: if you offer rolls, then be sure to make Philadelphia and California, if pizza, then don’t forget Margherita and Pepperoni. You can also add unusual dishes - this will set you apart from your competitors.

The menu needs to be updated periodically to maintain interest in your delivery. In the process of work, you will understand which positions are popular and which dishes customers do not remember. If you think that they are undeservedly deprived of attention, give them a discount or come up with a promotion that will stimulate sales. If this does not help, then it may be more profitable to refuse these dishes.

Introduce seasonal dishes to the menu, do not forget about those who fast, about vegetarians.

If you don't want to bother with compiling your own menu, become a franchisee - start working under a valid brand name. You will be provided with a menu, help to organize a business and its promotion. But to enter the business, you will need to pay for the franchise - and usually a considerable amount.

DO I TAKE MONEY FOR SHIPPING

Entrepreneurs use different schemes for charging delivery fees. Most often do free shipping with a minimum order for a certain amount, for example, 500-1000 rubles. There are options for a flat fee for delivery within the city, suburbs (usually more expensive) or with a fee per kilometer. In any case, shipping costs must be taken into account. They include the salary of the courier, the payment of gasoline, the depreciation of the car.

CALCULATION OF BUSINESS PROFITABILITY

Public catering is a highly profitable area, although the profitability of delivery is somewhat lower than that of stationary cafes and restaurants. The profitability of food delivery is 35-80%, and the payback period is from 6 months to 2 years.

The structure of food delivery costs looks something like this

FINANCIAL PLAN FOR A SMALL PIZZERIA

Let's calculate the profitability of pizza delivery. Let's say you plan to sell 40 pizzas a day. You will need eight employees: two cooks, two dispatchers and four couriers. Let one pizza cost an average of 600 rubles.

Initial costs:

  • purchase of equipment - 200 thousand rubles;
  • advertising campaign - 100 thousand rubles;
  • services law firm accompanying the registration of the company and obtaining permits - 20 thousand rubles;
  • renovation of the premises - 80 thousand rubles;
  • total - 400 thousand rubles.

Monthly expenses:

  • purchase of raw materials - 220 thousand rubles;
  • rent of premises of 60 square meters - 60 thousand rubles;
  • the salary of eight employees, taking into account social contributions - 260 thousand rubles;
  • advertising - 30 thousand rubles;
  • pizza delivery - 50 thousand rubles;
  • total - 620 thousand rubles.

Monthly income will be 40 * 30 * 600 = 720 thousand rubles.

Monthly profit after taxes will be approximately 80 thousand rubles. The costs will pay off in about a year.

TABLE: FINANCIAL PLAN FOR A LARGE COMPLEX LUNCH SHOP IN A RENTED PREMISES

Delivery of pizza, sushi, burgers, ready meals — profitable business for which there are customers even in times of crisis. If you offer quality products at competitive prices, you will surely quickly build a customer base and recoup your initial investment.

business magazine IQR got another one for readers interesting story from the first person about building your business from scratch. Our heroine delivers prepared food for events and offices. This business case is remarkable for two reasons: the starting capital is $150, the heroine's starting knowledge in the field of cooking is zero.

How and why I decided to start my own banquet food delivery business

Rice with vegetables

I'm Vika, I'm 28 years old, I live in Kursk. In 2011, I was forced to take up an activity that I had a very vague idea about before - this is the organization of the delivery of banquet dishes.

The reason for the need to cook food to order was my pregnancy, and I didn’t really want to remain without my own income. Due to its “interesting” position, it was not possible to work outside the home, and the “culinary masterpieces production workshop” was safely located in a rented apartment of 30 square meters in which I lived at that time, with a tiny kitchen and two-burner gas stove with oven.

Food delivery organization, business plan on the knee

Of course, initially I was not particularly enthusiastic about this idea, as I was sure that the service would not be in great demand, given great amount all kinds of cafes, restaurants - from the most expensive to budget. It should be noted that in Kursk there were already several organizations providing ready-made food delivery services, in our area it was called "Kitchen or a restaurant at home." But still I decided to try, because the losses are minimal.

Considering that by the age of 23 I didn’t even know how to fry an egg, the process of preparing dishes to order was the most difficult for me.

So I brought in my friend Olga, who is at one of the local eateries. Olya had to cook and at the same time introduce me to the secrets of the culinary arts, I, in turn, did the “rough” work in the kitchen and generated ideas for organizing delivery, compiled a menu, placed ads in the newspaper My Advertisement and on Avito in service section. It was planned to buy products and disposable containers in the nearest supermarket and wholesale base.

Calculation of income and expenses, first profit

The first order was received in March 2011, they asked for a "funeral" set of dishes, which cost 180 rubles per person, the number of people was 20, respectively, our first sale was in the amount of 3600 rubles. We spent a total of 4350 rubles (food - 1900 rubles, disposable containers - 300 rubles, advertising in the newspaper - 2000 rubles / month), as a result, from the first order we lost 750 rubles.

We received income from the next order, since we no longer spent money on advertising. For the first month of work, we had 7 orders for a total amount of approximately 22,000 rubles, the total income was approximately 10,000 rubles. Mostly they ordered home or to the country (taking into account the spring-summer period), once they ordered to the recreation center, which provides an area for a banquet.

Entry of the enterprise to a stable profit

During the first three months, our "enterprise" got its own pizzacon website, where the client could get acquainted with the menu and delivery conditions. We also acquired glassware for decorating dishes, edited the menu, which still works today. The number of orders increased to 7-8 per week. People order ready meals for anniversaries, funerals, birthdays, weddings. All this increased our income to 40,000 rubles a month for two.

New Year's Eve corporate parties and New Year's Eve gave us a two-month income, although we ourselves were destined to completely forget about the holidays - such is the work.

Is it possible to manage such a business alone?

About a year later joint work Olga and I stopped cooperating, I began to work alone, the duties of a dispatcher, courier, cook fell on my shoulders, fortunately, I learned to cook by that time not badly. I rented a separate one-room apartment for work, since it was, to put it mildly, not very comfortable to cook and store all the attributes of my business in the cramped apartment where I lived with the baby.

I bought a car, and now I independently delivered finished products to the client. Over the next two years, the work was stable, there was no shortage of orders, but there wasn’t much progress either, I “put together” a client base and didn’t really promote my service, until at some point the number of sales dropped significantly.

It even happened that in a month there were 4-5 small orders, this is very little. Most likely, this was due to the fact that such an activity has become quite popular among mothers like me who find themselves in maternity leave, the benefit of superpowers and great start-up capital not required.

I specifically panicked as this job was my only source of income. There were debts, and something had to be done urgently.

Business development - food delivery to the office

This is what the menu looks like

Service promotion. It's all about the price!

In 2014 I launched new service— delivery of complex meals to enterprises and offices, which provided me with a daily stable income. I had to drive around construction sites, markets, branches of various banks in Kursk in search of those who wanted to eat "hot dinners at home." The cost of one complex lunch was only 80 rubles, so, of course, there were plenty of people who wanted it - 12 people at the bank branch and 25 at the construction site. I bought a large thermal bag and have successfully "fed" 37 people from Monday to Friday weekly.

Plus, my orders for banquets have not gone anywhere, even if there were not as many of them as I would like, but I had enough, in total, my weekly income, minus the cost of food, was about 15,000 rubles.

Transition from home cooking to professional equipment

In the same year, I rented a room in mall. In the Evrasik family cafe, the kitchen was not fully used, so I was allowed to work in an empty part for a small rent - 10,000 rubles plus 5,000 (electricity payments) monthly, providing me not only with an area, but also with some pieces of kitchen furniture (tables , sink, racks for dishes) and some dishes.

I bought a professional stove with an oven from my own landlords, so my production could be called full-fledged and complete. I didn’t have to formalize my activities, because now I began to work closely with the owners of the very cafe where my workplace. On the website of my services, I posted certain items from the Evrasika menu that I didn’t have - pastries, desserts, services of catering chefs, which strengthened our partnerships and allowed me to act on behalf of landlords.

How much does a successful food delivery business bring

How to organize a business

When the number of orders for set meals approached fifty a day, I took professional chef With salary in the amount of 10% of the total turnover - this is about 17-20 thousand rubles a month - a normal salary for our city. And now my duties include only taking orders, delivering raw materials to the enterprise and finished products client.

AT holidays when there are a lot of orders and my employee can’t cope alone, another person comes out to help with the purpose of working part-time - this is a young student guy who, despite his very young age, loves his job very much and treats the cooking process with trepidation and zeal . Of course, I like it, because, although I learned how to cook, I never got to love this process. Therefore, I will gladly accept this guy in my team on a permanent basis immediately after his training. In the near future, I have - to acquire a courier, and devote myself to a deeper promotion of my services, as I see great prospects for this business, and finally formalize my activities in the form of an independent small business entity.

What are the prospects for this business, is it worth starting from scratch?

My own sister, who lives in a village 25 km from Kursk, has also begun to engage in this activity, and in that area her services are even more popular than mine in Kursk. She cooks at home, takes orders on my website, she has a three-room apartment and a huge kitchen of 22 square meters, so her activities do not particularly hamper the household. So my company has a kind of branch.

Summing up, I can say with confidence that it was not in vain that I once decided to organize the delivery of banquet dishes and set meals. My initial capital was only about 4,000 rubles, after 4 years my monthly net income is 60-70 thousand rubles - this is not much, I know that you can earn much more, and I am ready to work on this project to squeeze the maximum.

How nice after a hard labor day return home without grocery stores with their endless lines at the box office. Working people especially appreciate every saved minute of their personal time. Therefore, they will be doubly pleased when they come home to receive their favorite products with courier delivery. In our country, there are only a few such offers, although demand is growing from year to year, especially in large cities. If you decide to enter this niche, the first thing you need to do is put together a home delivery business plan.

Market analysis

In big cities, organizing a home delivery service for groceries is quite a profitable business. There are already dozens of these in Moscow. AT regional centers there are not too many such offers yet, so often no one will interfere with your development. This business can be in demand in a number of cases:

  • The city has a developed business center, and a significant part of the population spends most of their time at work.
  • You should focus on a strong middle class (small entrepreneurs, middle managers), since wealthy people dine in restaurants more often.
  • It is possible to offer a service for the delivery of products to the homes of the disabled and the elderly (you can offer reduced prices as part of a social project).
  • The peak of sales, according to statistics, falls on the cold season and slushy off-season.
  • It is possible to conclude a long-term contract with customers (say, for a weekly delivery of groceries).
  • It is worth considering the possibility of leaving for the nearest suburb for additional payment(for example, in Moscow, the service is regularly used by lovers of countryside recreation).

A detailed home delivery business plan with calculations, as well as a helpful and fast service will eventually result in ever-increasing income.

organizational plan

Any sample grocery delivery business plan starts with organizational issues. To get started, register. AT this case IP is the best form. In the future, creating a large network with service legal entities(for example, the supply of products for banquets), you can retrain as an LLC.

Having received permission to carry out courier services, you can proceed to the next step. Keep in mind that when registering a private enterprise, the state duty is 800 rubles. If you decide to resort to the help of intermediaries, then this amount will increase to 1200-1600 rubles. In this situation, it is better to save investments in business registration and manage, where possible, on your own.

To work, you will need to rent an office space. This is a place for the operator who will receive calls from customers, so it can be made small. After renting a room, think about technology. You will definitely need equipment for business. You need to buy at least one computer and equip it with all the necessary programs and Internet access. This set will cost about 30,000 rubles.

In addition, employees need to be provided with constant mobile communication. They must always be available. The phone will cost 10,000 rubles, and the unlimited tariff - 1,500 rubles.

staff

If you are going to start a grocery delivery business from scratch, then the costs should be kept as low as possible. Therefore, at the initial stage, it is supposed to stop at the minimum set. To get started, you will need only two positions: operator and courier.

The most important employee of the delivery service is the operator. He is in direct contact with customers and organizes the work of the delivery service. His responsibilities also include:

  • Processing orders from the website.
  • Coordinating the work of couriers.
  • elimination conflict situations with clients.

The person who comes to this position must be collected and stress-resistant, work efficiently. He must be able to easily establish contact with the buyer and win over him. The salary of the operator is 15,000 rubles.

The second position is a courier. You can work without couriers by arranging cooperation with a courier service. The advantage is that there will be no problems with time: no downtime for a period of lack of orders, no shortage of staff, when there are a lot of orders at the same time. Attract exactly as many employees as you need, and pay for each order separately. But there is also a drawback: it is more difficult to control the work of the counterparty than your own employees.

The duties of a courier are simple. He must accept an order from the operator, make necessary purchases. Further, according to the date and time, his task is to deliver the goods to the buyer and receive a full payment from him. The proceeds must be transferred to the director daily, at the end of the working day. For large orders, we recommend taking an advance payment of at least 50% from customers, since it is impossible to return the products if for some reason the customer does not redeem them. Another scheme is also common: couriers buy products with their own money and keep the payment for themselves, giving the company part of the delivery cost. This allows you to save on wages (the courier does not receive a fixed income), but this scheme only works if there are a large number of couriers and a sufficient number of orders to provide them with work.

A prerequisite for hiring a courier is to have your own car. From personal qualities it is worth highlighting the activity and diligence. In addition, the employee must understand the cost and range of goods in various large supermarkets in the city. We are considering an option with a full-time courier, whose salary is 15,000 rubles.

To prepare reports, you will need to use an online accounting service. This is necessary for the timely delivery of documents. Such services will cost about 8,000 rubles a year.

Business promotion

The profitability of home delivery of products directly depends on a well-organized marketing campaign. At the initial stage, a layout of business cards and booklets of your organization is being developed. An agreement is made with print media and billboard companies. After you decide on the number of booklets, the order is sent to the printing house. This is where you get paid when the job is done. The total cost of marketing and advertising, including business cards, booklets and billboards, will amount to 25,000 rubles. Printed products distributed to offices and residential complexes near the office.

The most important element for work is your website on the Internet. You can't save here. It should be easy to read, easy to use and functional (at a minimum, have Personal Area with the ability to form an order and leave wishes for ordering products by brand, characteristics and price category). Its appearance is bound to attract attention. Nothing should interfere with shopping.

It is important to correctly develop the points of the application. There should not be anything superfluous in it. Include only the most necessary information. The client should not get hung up on filling out the application form. Be sure to develop mobile app for your site. For many buyers, this will make the task easier, since they do not always have a computer at hand, unlike a phone. Give the client the opportunity to place an order with you as easily and quickly as possible. And he will become your regular customer.

The funds allocated for the creation of the company's website will amount to about 100,000 rubles, the application for Android and iOS will cost another 30-40 thousand rubles. At least 100 thousand rubles are allocated for the promotion of the resource on the Internet for the first six months.

Financial plan

Calculate price single service extremely difficult. It all depends on the scheme, and it is important to choose the most suitable option for you. You can set a fixed price for shipping. In this case, it does not matter how many products the client needs to purchase - a carton of milk or several bags, the price will be the same. The advantage of this option is a convenient calculation system for both the client and the company. The downside is that the order may be too large. It will take a lot of effort to complete it, the trunk will be completely clogged, several stores will be visited to collect the order, and the base price of the effort simply will not pay off.

According to another payment option for the grocery delivery service, the price may be certain percentage from the amount of the order. For example, when buying a product for 1000 rubles, the client pays 10% of the total cost, that is, plus 100 rubles. But this scheme also has a disadvantage. To earn, the order amount should be about 3-4 thousand rubles. The 100 rubles mentioned above will simply go to pay the courier and gasoline.

We recommend using a mixed scheme with a minimum order amount (say, 2,000 rubles for regions) and an additional payment for the order by amount, number of positions, or for bulky products (for example, bags of sugar) or oversized goods (usually non-food items). You will find the best option in the process.

If the client is outside the city, then discuss in advance the issue of paying for gasoline by the buyer. You can even install a special meter, similar to a taxi, on the car, showing the client how much was spent on gasoline. Be sure to include express delivery in your list of services. According to her, the client will be able to receive his order as quickly as possible. This service, of course, will be available for a fee.

If 2 couriers fulfill 10 orders per day with an average bill of 300 rubles per order, the daily revenue will be 6 thousand rubles. It will amount to about 150 thousand rubles per month (consider fluctuations in the number of orders in different days). Subtract from it the cost of salaries to employees (45 thousand), rent of premises (8 thousand), payment of gasoline and cellular communication(25 thousand), advertising (15 thousand), taxes and contributions to funds (10 thousand). Net profit in the first time will be about 40 thousand rubles. It is planned to increase it by increasing the base regular customers and providing employment for additional couriers. So, 5 couriers with a constant load will increase the profitability of your company to 80-90 thousand rubles a month.

Payback is planned to be achieved within the first year.

bonus program

Who doesn't love surprises?! Obviously, everyone is pleased to receive unexpected gifts and signs of attention. The profitability of your business will certainly increase if you periodically pamper your customers with various promotions and bonuses. For example, on a customer's birthday, you can give a sweet gift for free. He will definitely appreciate such a gesture. Or you can offer him to buy from you at a discount of 30-40% off the regular price. No one will refuse such generosity.

You can also introduce other nice little things to customers loyal to your company. For every tenth order, reward the buyer. A gift can be anything, for example, a small culinary magazine or a book. The sign of attention is important. You will also benefit from holding various competitions. Give sweet gifts to the winners. Attract newcomers who have just registered on your site with small bonuses. If you follow these steps, your customers will be happy and your business will prosper.

Eventually

This business is perfect for entrepreneurs taking their first steps. Home delivery costs are clearly small. Taking into account the fact that competition in most regions is still insufficient, it is quite possible to create your own successful business. To get profitability faster, you can use one of the offers of large franchises, of which there are many in Russia.

1. PROJECT SUMMARY

The goal of the project is to create a food delivery service from cafes and restaurants; region - Rostov-on-Don. Trademark- "Delivery". The demand for such services is due to the fact that often people want to eat delicious food, but do not want or cannot go to a restaurant for this. In addition, the service can be in demand when organizing various corporate events, less often family events. There is practically no competition in the market for this type of service.

The main performance indicators of the project are given in Table. one.

Table 1. Integral project performance indicators

The analysis of the industry and the region shows the presence of significant interest in this kind of services from potential customers. The location of the enterprise in Rostov-on-Don ensures the volume target audience several hundred thousand people. However, due to the fact that the food delivery market is still poorly covered (primarily by competitors), efforts are required to promote this type of service.

In general, the project can be characterized as medium in terms of risk. According to the degree of interest for the investor - as high.

2. DESCRIPTION OF THE INDUSTRY AND COMPANY

This type of service is new for Russia. There is practically no established competition in the market. With a sufficiently large number of catering establishments, their popularity, as well as taking into account the official population of the city within 1.1 million people, it is possible to predict a high level of demand for the project's services.

As a rule, food delivery services are offered directly by catering establishments; delivery is carried out on their own. As a result, the quality of service often suffers. Since this service is not a core service for a restaurant, less attention is paid to quality, the route of couriers is not properly planned when the load is heavy, which may lead to delays in delivery, re-sorting in the order, etc. In addition, the number of establishments offering delivery is very limited. Usually these are networks whose quality of dishes is relatively low. In general, it is inappropriate to consider such a delivery format as direct competition. Direct competitors are enterprises that provide completely similar services, that is, food delivery from a wide range of establishments, while not having own production. Today there are two such companies in Rostov-on-Don. They will be discussed in more detail in Section 4 of this business plan.

The target audience of the project is men, women, couples aged 15 to 50, as well as organizations. The level of income of the target audience does not play a decisive role, because. Even low-income Russians visit cafes and restaurants from time to time. Demand for the project's services does not have a pronounced seasonality, however, peaks in demand occur on Fridays and weekends, as well as public holidays; some decrease in demand is also expected in the summer for the holiday period.

Rostov-on-Don - The largest city in the south of the Russian Federation, the capital of the Southern Federal District and the Rostov Region. It is also a major industrial and business center. The level of well-being of the residents can be described as slightly above average. The number of catering establishments according to the portal www.afisha.ru is currently 1053 units.

The main instrument of the project is a website with menus of all partner establishments posted on it. It is possible to order food both through the site and by free number hotline(8-800-…). The site is integrated with the CRM system to ensure prompt interaction between the dispatcher and couriers. Delivery is carried out by couriers of the company within a maximum of 1.5 hours (during peak hours) from the moment of order, of which 0.5 hours are provided for cooking, the rest of the time is for logistics.

3. DESCRIPTION OF SERVICES

The main service of the project is the delivery of food from catering establishments (cafes, restaurants, fast food) to the address specified by the customer - to the home or office. At the initial stage, an assortment list of partner establishments is formed, consisting of at least 50 establishments. Establishments are divided into categories depending on the main direction: pizza, sushi / rolls, burgers, barbecues, pies, set menu.

For fast food categories, payment for delivery is provided in the absence of a regulated minimum order amount. For complex menus, a minimum order amount is set (depending on the category of the institution), delivery is free. In the first case, the profit of the project is formed directly from the cost of delivery, in the second - from the commission from the establishment (20-25% of the order amount).

2020 trend. Intelligent entertainment business. Minimum investment. No additional deductions or payments. Turnkey training.

Having received an order from the client, the dispatcher contacts the partner to confirm the possibility and deadline for the execution of the order. If it is possible to execute, the dispatcher by phone confirms to the client the possibility and terms, as well as the amount of the order, specifies the delivery address and the preferred method of payment. In case of impossibility of execution, the dispatcher apologizes and offers an adequate replacement option.

Payment for the order at the first stage of the development of the project is expected in two ways: by card on the site, in cash to the courier. In the future, the option of paying by card to the courier is provided. It is also planned to develop a mobile application for ordering and paying. The cost of dishes on the project website is equal to their cost in the institution.

4. SALES AND MARKETING

The competitive environment in the region under consideration is represented by three federal level players, which can be regarded as direct competitors. At the same time, all of them, in fact, are aggregators and provide intermediary services between the client and the delivery service; they do not have their own couriers, which means it is impossible to control the quality of the work of the deliverers. This can lead to delays and other unpleasant consequences that negatively affect the reputation of this site. The use of our own couriers in the project will ensure more flexible logistics and quality of order execution.

Promotion of the project services is carried out both with the help of its own website and with the help of leaflets distributed in partner institutions. There are also occasional radio promotions that give away gift vouchers with points that can be redeemed when ordering food. An additional effect is created with the help of branded advertising placed on couriers' cars.

Ready-made ideas for your business

When attracting partners, difficulties are not expected. The benefits of cooperation are obvious, especially for establishments without their own delivery service. The argument is based on the fact that the project attracts additional customers and in no way reduces the traffic of visitors to the institution itself; Moreover, additional clients do not create a load on the service room and its staff.

For establishments that have their own delivery service, the motivation is also quite obvious. Customers ordering food at home or in the office can find out about the company only through the corporate website; in case of cooperation, customers get an additional opportunity to learn about the institution. At the same time, since food delivery is not the main activity for partners, the staff of couriers is usually small, which leads to delays in delivery. Cooperation completely solves this problem.

An important point is the use of partners in promoting the project, for example, to place flyers on the restaurant tables. The main argument here is the direct interest of partners in the development of the "Dostav-Ka" project. It is also possible to conduct joint promotional activities.

5. PRODUCTION PLAN

The cost of services consists of fixed, variable costs, wage fund and depreciation of equipment. To variable costs can be attributed to the cost of fuel. Depreciation is charged on the cost of equipment and software used in work. Depreciation is calculated on a straight-line basis over a period of 5 years.

To accommodate the dispatcher and administrator, an office space with an area of 10 sq.m. or more is required. For official cars secure parking is provided in the immediate vicinity of the office. The office is being equipped computer technology, cooler, refrigerator, microwave oven.

Table 3. Variable costs

Table 4. Fixed costs

Orders are accepted 7 days a week. In the first 1.5 years, orders are accepted from 11.00 to 23.00. Then - around the clock. Supposed shift work work. In the first months of operation, only one courier vehicle is expected to operate. As the number of orders increases, so does the number of cars in a shift.

Table 5 staffing and payroll

Seasonal change is foreseen with demand peaks in December-January. The increase in demand is due to the fact that cold weather does not encourage going to restaurants, as well as the presence of public holidays, during which people usually spend more money, than usual. The decline occurs during the summer holidays, when some potential customers are outside the city, and the other part reduces expenses in order to save up for vacation or restore savings after it.

6. ORGANIZATIONAL PLAN

The functions of the head of the enterprise are performed by the entrepreneur himself. Its activity requires knowledge of the basics of entrepreneurship, tax and accounting, as well as the basics of labor protection.

The entire staff of the company is directly subordinate to the entrepreneur. Couriers are also indirectly subordinate to the dispatcher, who directs their actions, controls movement and forms the most efficient routes based on data from geolocation systems and information about city traffic.

The site administrator accepts orders (during peak hours, a dispatcher is involved to help), transfers them to partners. Couriers pick up the finished dish from the partner and deliver it to the specified address.

Requirements for the dispatcher: knowledge of the geography of the city and the main transport routes, balance. Requirements for the site administrator: knowledge of the administrative part of the CMS used, competent speech, courtesy and balance. Requirements for couriers: knowledge of the city, possession of a category B driver's license, driving experience of at least 3 years. Contracts with couriers liability within which their responsibility for the safety and intended use of official vehicles is indicated. To confirm driving skills before hiring, a test drive is carried out to the point indicated by the entrepreneur.

7. FINANCIAL PLAN

The financial calculation takes into account all types of costs associated with the implementation of the project: investment, fixed, variable, depreciation, payroll and social contributions. The production plan takes into account the seasonality of sales. The total amount of investment costs is 1.64 million rubles, of which 1.0 million are the entrepreneur's own funds. largest volume Money accounts for the formation working capital until the project reaches payback. The lack of capital is compensated by borrowed funds received from the bank for a period of 36 months at 18% per annum. Loan repayment is carried out by monthly annuity payments, credit holidays are three months. The cash flow statement is given in Appendix 1.

Remember the main thing - your client is already hungry. Therefore, your success in the market directly depends on the speed of delivery.

We opened the factory-kitchen “Wokker” in 2010, handed out business cards at the Afisha Picnic, and organized the initial flow of customers through Facebook. Our first delivery manager, a knight without fear or reproach, said: “We will take all of Moscow!” - and then the problems began.

Don't try to cover the whole city at once

Customers waited for orders for three hours. Our Facebook was filled with complaints - we sprinkled ashes on our heads, made compliments, apologized, but could not cope with the demand. A simple solution helped: limit the delivery area to a few areas adjacent to the factory. To do this, you need to determine the extreme points on the map, to which your courier can deliver the product, for example, within 40 minutes. You will get such a broken line around your factory. If you are based in the center, limit the delivery area to the center, if on the outskirts, start from your district. The ideal delivery scheme: you open a point, clearly define a zone around it and deliver the product within it. Then you open a second point and expand the delivery area, etc. As a result, you will get a decentralized model - many factory cafes, from which you can deliver the order at a strictly agreed time.

Slow delivery to the whole city will only work if you make a completely exclusive product that people are willing to wait for several hours. But, as soon as you have competitors who will carry faster, you will begin to rapidly lose revenue. In a metropolis, people often value time more than quality, and they are more likely to order something that will be delivered in half an hour than something that may be tastier, but will arrive in a half hour.

Calculate courier turnaround time

The most valuable resource in delivery is the courier, and key indicator is the turnaround time. If a courier from Tulskaya goes to Altufyevo to fulfill an order, he will fly out for about three hours, and at this time your customers will be waiting for his return. You can keep several dozen couriers, but this will eat up almost all the profits. Therefore, it is much more efficient to properly organize zonal logistics. In order for the delivery to be profitable, in the zone you have chosen, the courier must have time to make seven trips within a 10-12-hour working day. That is, each of them should take no more than an hour and a half there and back. For example, a trip by metro takes 25 minutes (we sat down with the Yandex Metro app and counted). And he can walk another 2 km - this is another plus or minus 20 minutes.

Food delivery always works in peak load mode. This amazing discovery was waiting for us almost immediately. Whatever promotions you come up with, for example, a 20% discount on orders after 4:00 pm, people still order food for lunch at the same time, the phone heats up, the queue grows, and it becomes difficult for you to explain to the fiftieth in this queue that his The order will begin to be prepared only after 40 minutes. How quickly you can serve at peak times depends on how much you can earn - we made 60-70% of the revenue during lunch hours.

Adjust logistics to accommodate peak workloads - for example, assign more cooks and couriers to this shift or give them a flexible schedule. Make sure there are enough during peak times to handle the flow of orders.

To save time during peak hours, make sure that all stages of work on the order are debugged. There are ready-made order management systems - for example, Aventa, iiko Delivery, Smartomato, but get ready for the fact that many of them will have to be redesigned to suit your needs. Usually, an order is accepted either by an operator, or through a website, or through a mobile application, then the order enters the system and goes into execution. There is a history of orders and dynamics in the process: when the order was received, when it went to the kitchen, and when it was transferred to the delivery service. After the courier calls back, the order goes into the "fulfilled" state and closes in the system.

Better your own courier than someone else's

We had a rather sad experience of communication with companies providing courier outsourcing services. Many of these companies did not follow appearance their couriers, and they are the face of your delivery. Many of their couriers were late and undermined our logistics, and if own employees you can influence, it is much more difficult to keep track of outsourcers. Almost all outsourcers work on volume, that is, their services are expensive with a small number of orders. And most importantly: there was a logistical gap between the work of the kitchen and the transfer of the order to the courier, which increased the delivery time. In addition, in some cases, cooperation ended in blackmail and arm-twisting according to the principle: “If you don’t pay today, we won’t leave tomorrow.” It is hard to work on such conditions, especially if your delivery is tied to a large outsourcing company.

Motivate couriers

There are different ways of cooperating with couriers: paying them a fixed amount, paying a percentage of the order, paying for going to a certain area. The first method should be abandoned as quickly as possible, since only the last two motivate the courier to return as quickly as possible.

We have tried many complex schemes to motivate couriers, one of them is the creation of "courier castes". The best couriers worked only in the center, and there was a strictly limited number of them. They earned more than the rest, but they could fly out of this caste if they delivered the order for too long, were impolite, etc. - after three warnings, such a courier was lowered in status. Ordinary couriers dreamed of getting this status.
