Autoclaves and pressure cooking

Pressure cooking is a method of cooking food in a sealed vessel or autoclave that does not allow air or liquid to escape the high pressure vessel. Since the boiling point of a liquid shifts upward as pressure increases, the temperature of the liquid inside the system can be increased up to 100 °C. In this case, the liquid does not reach the boiling point. Most high pressure cooking systems operate at 15 psi operating pressure, the standard set in the United States as early as 1917. The prototype of the first autoclave was invented by the French physicist Denis Pepin in 1679. Today, small installations are used by climbers to boil water at high altitudes. Until recently, autoclave cooking was considered very dangerous due to its explosive nature. Modern autoclave cooking systems are equipped with multi-stage protection mechanisms, special locks and automatic shutdown systems.

How the system works:

Under normal conditions, heating water above the boiling point is not possible. As soon as the water temperature reaches 100 °C, the water stops heating up. This is due to the intense evaporation of water during its heating. The evaporation process itself requires almost all the heat, which leads to the suspension of water heating. If the water boils for a long time, it completely turns into steam.

When water or liquid is boiled in an autoclave, the boiling point rises. As soon as the temperature of the soup or puree reaches 90°C, intensive evaporation begins. Water vapor, being in fact gas, creates excess pressure in combination with temperature, which leads to a stop of evaporation. The higher the temperature, the higher the pressure in the system. The heat generated by increasing pressure is called latent heat and has a great penetrating power into the structure of microorganisms, destroying them even in a dormant state - in spores.

A similar process is easily achievable in the preparation of solid non-cavernous foods. In case of preparation of spongy, cavernous products, a system with deep tank vacuum should be chosen. The residual oxygen content can help protect bacteria from destruction by creating thermal insulation for their shells.

Modern autoclaves use fractional vacuum, which removes oxygen in several cycles, providing 100% steam penetration during sterilization and homogenization of the product.

How does the ripening chamber “work” and what is the chemical and biological nature of the processes occurring in it. Ethylene (C2H4) is most often used for fruit aeration. This gas is one of the phytohormones (i.e. a substance that is produced endogenously by the plant) and is therefore non-toxic. Green fruits contain a lot of chlorophyll, starch and little sugar. Under the action of ethylene, tannins and chlorophyll disappear, the fruits soften and ripen quickly. Ripening with ethylene is carried out in hermetic chambers installed in heated rooms. The optimum humidity in the chambers is 85-95%.

For rapid ripening, the concentration of CO2 in the chambers should be no more than 2%. There are a number of methods for using gaseous ethylene in ripening chambers. The most popular are the catalytic generator and flow systems. When using an ethylene supply system catalytic generator Ethylene is produced on site: during the catalytic process in the ripening chamber, the liquid concentrate is converted into gaseous C2H4. The job of ripening room operators is to connect the generator to the mains, place the concentrate in it, and turn on the generator.

Catalytic type generators based on the catalytic decomposition of a liquid mixture at high temperature. This is currently the main type of generators. They are easy to operate, well controlled, therefore they are used in automatic fruit gassing chambers. For catalytic type generators, special alcohol-containing mixtures are used, which release ethylene during thermal decomposition. These mixtures contain special additives that provide a high percentage of ethylene yield, as well as special additives - promoters that ensure the safety of the catalyst in the gas generator. One of the most common mistakes is using pure alcohol to produce ethylene with a gas generator. In this case, the service life of the catalyst in the gas generator is sharply reduced, the catalyst is poisoned.

Caution should be taken not to use pure ethylene bottles for gassing, this is very dangerous and can lead to an explosion. The slightest leak of ethylene can lead to the creation of an explosive concentration (ethylene explodes when mixed with air at a concentration of 2.8% to 28.6%).
The disadvantage of ethylene is also its volatility, so ethrel is sometimes used as an alternative to ethylene.

The use of etrel avoids the inconvenience associated with the use of ethylene. Unripe fruits are placed for 0.5 - 10 minutes in a solution of etrel (0.25 - 4 g / l), then the fruits are kept for several days in a warm room. Ethrel, getting into plant tissues, releases bound ethylene, and the result is the same effect as when processing fruits in an ethylene chamber.

- At minimum temperatures, fruits and vegetables are generally indifferent to external ethylene treatment;

- Ethylene can be detrimental to some plants

Some plants, vegetables and fruits are extremely sensitive to the effects of ethylene. Ethylene generates the aging process of plant cells, at a certain critical moment, aging brings the fruit or vegetable to a state of maximum ripeness. Overcoming this point, the plant product undergoes decay and complete disappearance. The degree of damage to the product is determined by the amount of ethylene with which the product has come into contact.

The definition of "innovative products" is not contained in regulations RF. The Law “On Science and State Scientific and Technical Policy” dated August 23, 1996 No. 127-FZ contains the concept of “innovation”, which means a new or significantly improved product (good, service) or a new process put into use, new way sales, as well new method organization of jobs.

Based on it, innovative products should have the following quality: be new, i.e. just put into use or be significantly improved compared to previous samples.

Innovative products under 44-FZ, along with high-tech products, are a priority in public procurement. This principle is established by Art. 10 44-FZ. Information about its purchase is highlighted in a separate column in the procurement plan. It is acquired through a competition with limited participation or a two-stage competition.

The list of innovative products under 44-FZ is contained in Appendix No. 2 to Decree of the Government of the Russian Federation No. 99 dated February 4, 2015. Purchase of innovative products under 223-FZ

Purchases of innovative products of high-tech products within the framework of 223-FZ can be carried out by all customers. In addition, Government Decree No. 475-r dated March 21, 2016 approved a list of legal entities that are required to purchase innovative products.

It currently includes 90 legal entities, including:

  • PJSC Gazprom;
  • PJSC "Aeroflot - Russian Airlines";
  • JSC "Russian railways" and others.

The volume of innovative products that the above legal entities are required to purchase is set in the regulation, approved by Decree of the Government of the Russian Federation of December 25, 2015 No. 1442. Customers of innovative products should determine the annual volume of purchases as the value of contracts for innovative purchases for the previous year, increased by 10%. At the same time, it cannot be less than 10% of the total value of all contracts executed on the basis of procurement results for the reporting year.

The plan for the purchase of innovative products under 223-FZ was approved by Decree of the Government of the Russian Federation of September 17, 2012 No. 932. The plan for the purchase of innovative products of the above persons should contain a section on the purchase from SMEs works, goods, services, in accordance with the approved list. The plan for the purchase of innovative products of high-tech products from customers included in the list approved by Decree No. 475-r should include a list of innovative products according to 223-FZ, which will be purchased from SMEs (part 3.3 of article 4 of 223-FZ).

Other customers place in the UIS a plan of innovative products for a period of 5-7 years. In the event that a legal entity does not plan to conduct such purchases, it may publish zero plan procurement of innovative products.

The plan for the procurement of innovative products includes:

  • the cost of contracts drawn up based on the results of the purchase of products included in the plan for innovative products under 223-FZ for the previous year;
  • the annual volume of purchases of innovative products, which is planned to be purchased in accordance with the draft plan for the purchase of innovative products;
  • the annual volume of purchases of innovative high-tech products, which are planned to be purchased only from SMEs, etc.
