If the results of physical, chemical and microbiological control show that the product is safe in terms of microbiological indicators, meets the requirements of GOST or TU in terms of physical and chemical indicators, then a decision is made to sell the products on a common basis.

If the product is microbiologically unstable, it is disposal, if there are deviations in physical and chemical parameters, determine how critical these deviations are and, together with the manager, make a decision on disposal or sale at a reduced price (for example).

13. The head of the production laboratory must ensure the quality control of the shipped products.

Preparation of products for shipment consists in sticking a label on a jar / package, labeling products (putting a date on the package), forming a group package, marking a group package. When preparing products for shipment, the requirements of TR TS 022/2011 " food products in terms of its labeling.
For each batch of products, a declaration of conformity, a certificate of quality and safety is issued.

You can object to me and say that certificates of quality and safety have been canceled and they can not be given. You can, but you don't have to! Because, in the certificate of quality and safety, the quantity, assortment, date and change of production of the shipped products, the number of the consignment note, the date of shipment of the products, the consignee are indicated.

It is this information that is necessary for conducting an internal investigation in case of claims and for organizing the traceability process at the enterprise.

14. The head of the production laboratory must ensure the organization of weekly tastings.

Tastings should be organized at regular intervals. The frequency is determined depending on the range. There should be no more than 20 product samples at one tasting. The main task of tasting is to determine the stability of organoleptic indicators, stability in quality.

What does it mean that products are stable in quality? This means that regardless of the date and change of production, the products are the same in taste.

This means that technological processes are controlled and the laboratory WELL DONE!

15. The head of the production laboratory must ensure the verification of equipment and measuring instruments.

Verification of equipment and measuring instruments (SI) is carried out once a year.

16. The head of the production laboratory is responsible for the textual information to be applied to the label.

In order to correctly put information on the label, three documents are used:

  • declaration of conformity. From the declaration we rewrite the address (s) of the enterprise, the name of the product, the number normative document, storage conditions, expiration dates;
  • normative document. From ND we take information about nutritional value, product grade (if applicable), storage conditions after opening;
  • TR TS 022/2011 "Food products in terms of their labeling". From TR TS 022 we take the requirements for labeling packaged products and the requirements for labeling transport packaging.

17. The head of the production laboratory should train the staff.

Personnel training is carried out according to the Training Program approved by the head of the enterprise with a frequency of 1 time per year.
The staff needs to be trained, the more the staff knows, the better it will work, the easier it will be for you to work.
